Agar (agar-agar) powder (food additive)

Agar is a type of thickening gelatin obtained from algae. Agar powder can be used in confectionery, ice cream, jams, sauces, marmalade. It can be used as a thickener in soups, ice cream and jelly. It can be added to jam, honey and butter to reduce the sugar content. Special agar powder is used in confectionery to obtain a transparent image and extend shelf life. It also acts as a preservative.
